Wash and put dried Lamon beans in cold water for at least 24 hours; bring a large container because they will double the size.
Put the beans in a pod with salt water and bring to boil; the cooking must be done at medium heat, skimming when needed. It will take 2-3 hours for cooking.
At half cooking strain away some water and replace it with red wine. Add the bacon cubes and keep cooking.
At the end add a pinch of chopped parsley, a pinch of flour, salt and pepper.
Dress with a drizzle of extra virgin olive oil.
